Plum Flavoring - 1 oz
Super Strength Plum Flavoring
A typical 5-6 gallon batch uses 1-2 drams (0.125-0.25 oz), depending on the flavor and desired intensity. Add the flavor during kegging or bottling, starting with the lower amount and adjusting gradually to taste. Mix gently and sample before treating the entire batch.
Flavor Profile and Beverage Ideas
Plum has a deep stone-fruit character that reads darker and more wine-like than peach or apricot. Use it in Belgian dubbel, saison, brown ale, hard cider, melomel, or red and rosé wine. A restrained dose can add ripe-fruit depth without obscuring fermentation character. Blackberry, cherry, vanilla, cinnamon, and light oak are complementary additions. In a dry base, Plum will read sharper; a little residual sweetness will make the aroma and finish feel fuller.
